Veggie Pad Thai

Simple recipe...thanks to Trader Joe's!

Veggie Pad Thai

1 box of Trader Joe's Pad Thai with sauce

1/2 of a white onion

1/2 cup of broccoli

1/4 cup edamame

1 can of baby corn

1/2 cup sliced mushrooms

(and/or any other veggies you might have: sprouts are great in this, but didn't have any tonight)

1 egg

1/4 cup crushed peanuts

2 tablespoons vegetable oil

Follow instructions on the back of the box for the noodles.

In a sautee pan add all the veggies and sautee for 3-5 minutes in oil until they are well cooked.  Scramble the egg in a separate pan and set aside. Once noodles have finished cooking add to veggies and mix in the sauce packet.  At the very end add the scrambled egg and crushed peanuts.

HI,

I made the Trader Joe's Pad Thai tonight and I didn't feel great after it. I read the ingredients and decided it was safe, but I also noticed it didn't have the symbol for gluten free. Is Tamarind a safe ingredient for a G-Free Diet? I have been researching the ingredients to try and figure out what ingredient has gluten. There has to be a reason why TJ isn't giving it the G. Any insight would be great.

I've also noticed that the "G" isn't on the package, but if you look at their GF list they list these as bing GF. I've also noticed in the last year that when I first found out about this many of their products were not listed as GF on the package. You had to go to the customer service counter and ask for their GF list. Now that this is becoming more well know they have joined the GF label train. Which is great!! I just wish they would of done it sooner. Not all of their products are labeled GF still...you have to do some reading but they are getting better about this.

An alternative to this is just buying plain rice noodles and a jar of Pad Thai sauce from Thai Kitchen (their products are gluten free and taste great!). I haven't had any problems with the sauce in the TJ's package, sorry to hear that you have.
